Red lentil and vegetable stew can be a vegetarian meal on its own. It consists of red lentils, carrots, celery, onions, garlic, vegetable stock, ground cumin, Tabasco chipotle pepper sauce, tomatoes, and olive oil. Also you can try Shakshouka which is an egg and tomato dish that can be accompanied sometimes by garlic, basil, or many other ingredients. Another real source of vitamins is represented by a lentil and spinach salad with onion, cumin and garlic, as well as Salata Arabieh that provides a refreshing complement to Middle Eastern dishes. Salata Arabieh can be served with hummus and falafel in pita bread. A great accompaniment for kebabs, grilled meat or fish is vegetarian pilaff which is made with bulgar wheat, but it can be replaced with rice. Ma´amoul or Lebanese date stuffed pastries is a popular Middle Eastern pastry, especially as popular as Easter. It can be served with coffee. Lentil and spinach salad with onion, cumin and garlic is prepared with fresh bay leaf, parsley, fresh thyme, olive oil, salt, pepper, celery, Dijon mustard, red wine vinegar, and lemon rind.
