One delicious dish is represented by eggplant salad which consists of eggplant, crushed garlic, slices of white bread, lemon juice, olive oil, one chopped onion, chopped parsley, pepper, salt, and black and green olives. You can also try pickled eggplant if you have red wine vinegar, olive oil, garlic, cumin, red chili peppers, oregano and pepper. Marinated chickpeas are also a tasty combination of chickpeas, bay leaves, chopped and sieved hard boiled egg yolks, olive oil, red wine vinegar, onions, parsley, garlic, capers, and salt. First, you have to soak the chickpeas overnight in cold water, add the bay leaf and salt, cover and cook over medium flame about an hour and a half, adding more water. Then you put the egg yolks in a mixing bowl and beat the vinegar and oil with a wire whisk, and then stir in the garlic, onion, chickpeas, parsley, and capers. They have to be refrigerated overnight. Another delicious salad is that containing lentil, spinach, onion, garlic, and cumin.
