A very delicious appetizer is Libyan cheese dip which is very popular in this region. In order to prepare it you need feta or goat cheese, plain yogurt, lemon juice, fresh dill or fresh fennel, fresh parsley, crackers or chips, and olive oil. For swordfish kebabs you need swordfish steaks, olive oil, lemon juice, paprika, garlic, tomatoes, and onions; the fish has to be placed in a large dish. Then you blend together the lemon juice, oil, garlic, paprika and seasonings in a small bowl, pour over the fish, cover loosely with clear film and leave in a cool place to marinate for up to 2 hours. After this you thread the fish cubes onto skewers, alternating with pieces of tomato and onion, and then grill the kebabs for almost 10 minutes. Another interesting Libyan dish is beans with spinach and consists of fresh spinach, white beans, olive oil, cilantro, green onions, turmenic, garlic, black pepper, salt, water, and meat. Among other dishes you can find Salata Arabieh, Libyan cheese dip, curried turkey legs, or curry devilled eggs with cilantro.
