Laotian salads are light and high in nutrients and that is why they are served as a starter. Salads are topped with dressings, such as soy sauce (which is usually replacing salt) with parsley, lime juice, sesame oil, peanuts and chilies. The sweet and sour tofu salad is made of bean curd cubed tofu, sliced onions, carrot strips, sliced celery, red bell peppers, broccoli, green beans, soy sauce, tamarind concentrate, tomato puree, chili sauce, sugar, white vinegar and corn flour. The lao green papaya salad is made with green papaya, red and green Serrano chilies, garlic, beans, cherry tomatoes, ground peanuts, dried shrimps, cabbage and lettuce leaves, topped with a dressing of lime juice and fish sauce.
