The main Kenyan recipe is ugali, which is also the national dish. In fact it means cornmeal porridge cooked with water to a thick consistency and poured out onto a plate for everyone to serve from. Plantains in coconut milk sounds interesting, as well, so it worths spending a part of your time to prepare it, using sliced plantains, curry powder, cinnamon, cloves, coconut milk, and salt. As for vegetable curry, use onions, cumin seeds, cooking oil, potatoes, cauliflower, green beans, tomato paste, eggplant, mustard seeds, ginger, garlic, coriander, ground cumin, chili peppers or cayenne pepper, cinnamon sticks, cloves, turmenic, green peas, fresh leafy greens, dry chickpeas, and salt.
