Whether it is Aemono or Sunomono, both meaning salad but the distinction is not always clear, the sauce is usually made of a vinegar and soy sauce mixture and mixed with other ingredients such as tofu and dashed with sesame seeds and generally reflects the season. Sesame seeds are worth mentioning here as they play an important role in Japanese salads. They are often roasted and ground and added to many types of dressings as they add a delicious nutty flavor.
- Sunomono- literally means "vinegared things" and refers to salad items which have a vinegar.
- Aemono- means "dressed and harmonized" and may include ingredients such as fish, shellfish, seaweed, and cooked vegetables.
