Chilled avocado soup is made of avocados, chicken or vegetable stock, lime juice, yogurt, Tabasco sauce, salt and black pepper. First the avocado is blended then is added the yoghurt, Tabasco sauce, salt and pepper. It’s served cold. “Mafe” is meat in peanut sauce and is made of oil, onion, garlic, ginger, beef, tomato paste, tomatoes, salt, pepper, water and peanut butter. First add the onions, garlic and ginger in a large pot with oil and sauté for about five minutes. The beef is sauté until it becomes brown and then the tomato past and tomatoes are added. Next step is to stir for a couple of minutes until the tomatoes are reduced. Water is added to loosen the dish up. In the end the peanut butter is also added and simmered for another five minutes or until the oil rises to the surface. It’s served with rice or couscous. The Ivory Coast Fish soup is made of fish, “garni”, tomatoes, onions, garlic, leeks, cayenne pepper, whit wine and oil. First the tomatoes are peeled and chopped same as the leeks and garlic. In a large pan with heated oil the leeks, garlic and onions are sauté. After this the wine, water, “garni” and cayenne pepper are mixed together with oil. In the end the fish and salt are added and cooked for about a half an hour.
