The Italian cuisine is primarily a durum wheat semolina and flour-based cuisine having more than 600 recipes for preparing pastas, risotto and pizzas. Pizza is considered to be the national dish, and the variations in which they come available, include pizza con fungi, capriccioso, quarto formaggio, primavera,con pollo, calzone and even vegetarian pizzas. Different types of pastas include string-shaped pasta like spaghetti and vermicelli, short tubes like elbow macaroni and penne, ribbon-shaped ones like fettucine and linguine, large sheets like lasagna, tiny grains like couscous and orzo, and hollow pasta stuffed with filling, like ravioli, manicotti, and tortellini. They can be prepared with sauces starting from a simple pomodoro or amatriciana one, to alfredo, pesto, and Bolognese sauce. Individualized Italian dishes can include not only pasta and pizzas, but stakes, stews, grilled meats, seafood dishes, antipasto, and delicious desserts. Mascarpone, the famous Italian sausage, scampi, which are large shrimps, calamari and octopus meat are some of the specific meats used in the Italian cuisine.
