The Greek salad, also called horiatiki salata is the most enjoyed Cypriot salad and it is prepared with tomatoes, lettuce, bell peppers, feta cheese, green olives and many seasonings and herbs. Cypriot cuisine also includes a variety of salsas, which are added to various kinds of meat and garnishes. One of these salsas is the saltsa domata or tomatoes sauce, which is simply prepared with ripe tomatoes, bay leaf, butter, cinnamon stick, sugar, onion, pepper and garlic, but this composition has to be kept in the refrigerator for 2 weeks before consuming it. There are many marinated dishes which are served with salads, like the marinated olives, prepared with green, cracked olives, coarsely, coriander seeds, garlic, olive oil and lime juice.
