Pita bread is served with various dips and salsas, like the chick-pea dip and the saltsa domata or tomatoes sauce, which is simply prepared with ripe tomatoes, bay leaf, butter, cinnamon stick, sugar, onion, pepper and garlic. The chick-pea dip is a puree made of canned or freshly cooked chickpeas, tahini sauce with lime juice and salted garlic. The dips are placed in small bowls and garnished with black or green olives, fresh parsley, mint and other herbs or seasonings. A very specific appetizer consists of talatouri, which is a mixture of mint and cucumber, with a topping of yoghurt and garlic – this dish is called tzatziki in Greece and Cacik in Turkey.
