The vegetables dishes are represented by rukau, which consists of taro leaves, taro root (which is prepared boiled and mashed) and kumara (sweet potatoes) salad. Besides these, there are the exotic fruits like papaya, mango, coconuts, bananas, citrus fruits, avocado and melons, which are all used for the local desserts, such as the grated coconut flesh for various cakes and tarts, made of milk, eggs, nutmeg and coconut milk and cream.
