Fufu (foo-foo of the African cuisine) is made by boiling cassava, yam or plantain, then pounded and mashed. The hot plantain crisps are a famous snack or appetizer, simply made of firm plantains, lemon juice, ginger, oil and cayenne pepper. Cassava is very much consumed in all central Africa, especially as cooked greens. Another green that is consumed in Burundi is the spinach, especially prepared as a stew with tomatoes, peppers and chilies, but also onion and peanut butter. The bamabara is a traditional porridge, made of rice, but flavored with sugar and peanut butter (there is a wide variety of nuts in Burundi).
