Preparing an "Algerian style" vegetarian meal can be a simple thing to accomplish, since staple ingredients include couscous, yellow rice, fruits and vegetables.

  • Couscous is semolina-like pasta made from cracked wheat and may consist as the basis of a vegetarian meal. It can be served with different sauces, spicy or mild, or with steamed vegetables.
  • Salads of fresh vegetables, such as tomatoes, cucumbers, peppers and onions are great during summertime, and baked veggies, such as zucchini, squash, artichoke and eggplants, make for delicious vegetarian hot stews.

As part of a vegetarian meal, "Jary" (a thick lemony wheat soup with green herbs and mint) can start of lunch, and fired potatoes in peanut or olive oil can be served as a second course. Dried fruits are great for a vegetarian dessert.
