Cassava Leaves and Beans

  1. Soak the Beans overnight in cold water. Drain and rinse thoroughly.
  2. Cover the Beans with water and bring to the boil.
  3. Reduce heat. Cover and simmer over low heat, stirring occasionally, until Beans are tender. #Remove Beans from heat and set aside.
  1. While the Beans are simmering:
  2. Heat half of the oil in a skillet and fry the onions and green pepper for a few minutes.
  3. Add oil-onion-green pepper mixture to Beans.
  4. Rinse cassava leaves in hot water then crush cassava leaves with a mortar and pestle
  5. Bring a separate pot of water to the boil.
  6. Add greens, leek, and remaining oil. Boil for a few minutes, then reduce heat and and cook until greens are tender, stirring occasionally.
  1. Combine greens and Beans in the largest pot.
  2. Add salt to taste.
