Not personally tried but sounds interesting:
Makes 4 servings
8 slices bread 1/4 cup mayonnaise or miracle whip Leaf lettuce 1 cup carrots coarsely grated 1/4 cup raisins 1/4 cup celery minced 1/4 cup coconut shredded 1/2 cup chunky peanut butter
Lay out slices of bread; spread 4 lightly with mayonnaise and top with lettuce leaf. Mix together remaining mayonnaise, carrots, raisins, celery, and coconut. Divide this mixture over lettuce-covered slices of bread. Spread remaining slices of bread with peanut butter. Press peanut butter halves onto lettuce halves. Cut and serve. This would also be good in pita bread.
