Carimoñolas (Stuffed Yucca)

  1. Boil yucca until tender.
  2. Mash as you would mash potatos.
  3. Meanwhile, cook all other ingredients except egg for about 20 minutes.
  4. Remove from heat. Add egg.
  5. Take 2 tablespoons of yucca and form a ball.
  6. Flaten to a circle.
  7. Add a tablespoon of meat mixture and form yucca around it and shape into a 3-4 inch roll.
  8. Try in oil until lightly browned.
