Ingredients[]
- 1 Chicken, cut in small pieces
- 3 T oil
- 2 Medium Mexican Squash, diced
- 1/2 t cumin seed, mashed
- 1-2 cloves garlic, mashed
- 1/4 t black pepper
- 1 Onion, chopped
- 1/2 C tomato sauce (or 1 C stewed tomato)
- 1 Small bell pepper, sliced
- 1 1/2 C water
- 16 ounces of Frozen Corn or Fresh if available
- 1 tsp of tomato flavored Chicken Buillion

Brown Chicken in oil cooking thoroughly. Drain excess oil and stir in Squash. Add all remaining ingredients and stir well. Cook for 25-35 minutes. over low heat. Substitution: You can substitute 4 Chicken breasts for the Chicken. If there is too much broth boil for additional 6 minutes uncovered.
