- 1 lb self-rising flour
- 8 oz butter
- ½ tsp salt
- 2 tsp baking powder
- 12 oz sugar
- zest of one lemon
- ½ pint of milk
- 2 beaten eggs
- Sift the flour into a mixing bowl, and then rub in the butter.
- Add the other dry ingredients, and then stir in the milk and beaten eggs.
- Mix well.
- Pour batter into a greased cake tin or loaf pan, and bake at 325° for thirty minutes.
- Reduce the oven temperature to 300 °F, and bake for another two hours.
