CARNIVAL RICE

Makes 6 servings.

- 1 cup uncooked rice
- 1/4 cup chopped Onion
- 1 tablespoon butter or margarine
- 1 teaspoon salt
- 1/8 teaspoon ground turmeric
- 2 cups water
- 1/4 cup slivered blanched almonds, toasted
- 2 tablespoons diced pimiento
- 1 tablespoon chopped fresh parsley
- 1/8 teaspoon ground cloves
- salt and ground black pepper to taste
- 2 tablespoons chopped cilantro or parsley
- 4 cups hot cooked rice

- Combine rice, Onion, butter, salt, turmeric and water in large saucepan. Bring to a boil; stir once or twice.
- Reduce heat, cover, and simmer 15 minutes, or until rice is tender and liquid is absorbed. Stir in almonds, pimiento and parsley.
