CARAMEL BANANAS

  1. In a small skillet:
  2. Heat: 1/2 cup white sugar
  3. 1 cup light brown sugar
  4. 3 Tbs. evaporated milk
  5. 2 Tbs. butter.
  6. Cook until Sugar caramelizes (i.e., melts and starts to turn brown).
  7. Stir in 2 oz. white rum and cool.
  8. Slice 4 bananas.
  9. Arrange 1/2 banana per person in compote dish.
  10. Spoon 3 to 4 Tbs. CARAMEL SAUCE over bananas.
  11. Sprinkle 1 to 2 tsp. CHOPPED peanuts over caramel sauce.
