- 1 cup Buckwheat pancake/waffle mix
- 1 cup water
- 1 large banana, mashed
- 1 cup fresh or frozen blueberries
- 2 tablespoons orange juice
- 1 teaspoon maple syrup
2. Meanwhile, preheat a nonstick griddle or skillet to 450 °F. Pour the pancake mixture onto the griddle and cook for 1 -1/2 to 2 -1/2 minutes. Then turn the pancakes over and cook for another minute. Transfer the pancakes to a plate and serve with blueberry sauce (below).
