Broiled Lamb Chops


Serves 6


A loin or rib cage cut 1-1/2 inches thick makes an ample serving for one moderate eater.


6 loin or rib lamb chops

Salt

Freshly ground pepper


Trim excess fat from the chops. Preheat the broiler and place the meat 3 inches below the heat. Broil 1-inch chops 3-4 minutes on each side for medium-rare; broil 1-1/2-inch chops 5-6 minutes each side. Salt and pepper to taste.



Variation:


Broiler Chops w/Bacon


Follow the recipe for Broiled Lamb Chops, but have the butcher bone the chops and wrap each one in 1 strip bacon.
