  1. Choose a medium-sized chicken.
  2. Dredge with salt and pepper and skewer diagonally from leg to wing.
  3. Broil over hot charcoals for 20 to 30 minutes, turning and basting regularly with butter until evenly browned.
  4. Remove the chicken from the skewer and serve garnished with lettuce, fresh-salted cucumbers and tomatoes.
