breadfruit should be cooked as it begins to become ripe. Fully ripened, mushy, breadfruit is not as good.
Ingredients[]
- 2 cups cubed, roasted breadfruit
- 1 stalk celery, chopped
- 1 small sweet pepper, chopped
- 1 small Onion, chopped
- 2 Tbsps. palm oil
- 1 can mixed vegetables, drained
- 1 tsp. salt
- 1 head lettuce, separate leaves
Directions[]
- Combine breadfruit with celery, sweet pepper, and Onion.
- Moisten with palm oil, and toss in mixed vegetables.
- Chill for 10 minutes.
- Serve on a bed of lettuce
