4 T. olive oil 1 medium onion, thinly sliced 2 cups rice, washed, soaked in cold water for 30 minutes and drained 2 tomatoes, blanched, peeled and chopped 1 t. salt 3 1/8 cups boiling water
In large pan, heat oil over medium heat. Add onion and fry, stirring constantly for 5 to 7 minutes or until onion is soft and translucent but not brown. Add rice and fry for 5 minutes. Stir constantly. Add tomatoes and salt. Cook for 2 minutes and then pour in the boiling water. Reduce heat to low. Cover pan and simmer for 15 to 20 minutes or until rice is cooked and all liquid has been absorbed. Turn rice into warmed serving dish and serve at once. Serves 4 to 6 Source: My Old Recipes
