Black Beans and Rice


  1. Sauté onions and garlic in vegetable oil for about 3 minutes.
  2. Add broccoli, beans and rice.
  3. Cover and cook, stirring occasionally, until broccoli turns bright green.
  4. Gently stir in tomato and cilantro.
  5. Sprinkle cheese over mixture and let melt.
