- Cut a circle from top of each cheese, about ½-inch in from sides.
- Scallop the edges for an elegant presentation, discard removed wax.
- Scoop out cheese, leaving approximately a ½-inch shell combine cheese, sour cream, beer, and chives in a food processor.
- Process until smooth.
- Spoon back into shells.
- Cover and chill for 2 – 96 hours.
- Serve slightly chilled or at room temperature.
