Beefy Quiche Adillas
12 ounces deli-roast beef, thinly sliced and chopped into small bite-sized pieces 6 chopped green onions 1 beaten egg 1 cup grated Parmesan cheese 1 cup mayonnaise 1 burrito size (approximately 10-inch diameter) flour tortillas Additional chopped green onions (optional)
Preheat oven to 400 degrees Fahrenheit. In a large mixing bowl combine roast beef and 6 chopped green onions, set aside. In a medium-sized mixing bowl combine egg, Parmesan cheese and mayonnaise. Fold egg mixture into beef and onions. Place flour tortillas in single layer on several large cookie sheets (tortillas do not need to overlap one another). Spread one-fourth of beef mixture evenly over each tortilla, leaving approximately 1/2-inch border on all sides. Place in oven and bake for 20 minutes or until beef mixture has set. Remove from oven and cut each tortilla into wedges with pizza cutter. Sprinkle additional chopped green onions over top, if desired. Serve immediately.
