  1. Sort, rinse, and soak beans; drain, rinse.
  2. Heat oil in pressure cooker.
  3. Saute onion, garlic, and Italian sausage 4 – 5 minutes or until onion is tender, stirring frequently to prevent browning.
  4. Add carrot, celery, and sage.
  5. Saute, stirring frequently.
  6. Add beans, stock, and water.
  7. Stir well.
  8. Cover with water by 2 inches above level of beans.
  9. Lock lid and bring to full pressure.
  10. Adjust heat to maintain pressure and cook for 9 minutes.
  11. Remove from heat and naturally release pressure.
