Barley malt syrup is a sweetener produced from sprouted barley, containing approximately 65 percent maltose, 30 percent complex carbohydrate, 3% protein. Malt syrup is dark brown, thick and sticky; and possesses a strong distinctive flavor, similar to that of molasses. It is about half as sweet as white sugar. Barley malt syrup is best used in combination with other natural sweeteners.
A grain syrup and food sweetener made from sprouted barley that has limited use in general baking, but used more in the production of beverages such as beer due to the concentration of enzymes for conversion of starches to sugar, its supply of protein for yeast, and its malt flavor. Since it contains complex sugars, it is slowly absorbed into the bloodstream aiding digestion and decreasing chances for producing rapid blood sugar levels. Mildly sweet flavored, barley malt syrup has the consistency and flavor similar to molasses. When used for foods, it is generally an ingredient in desserts, breads or malted milk drinks. This syrup may also be referred to as barley syrup, malt syrup, dark malt syrup, or malted cereal syrup.
