Bamboo shoots or bamboo sprouts are the edible shoots (new bamboo culms that come out of the ground) of bamboo species Bambusa vulgaris and Phyllostachys edulis. They are used in numerous Asian dishes and broths, and are available in supermarkets in various sliced forms, both fresh and canned versions.

The first tender young growth of an edible variety of bamboo plant, they are used in Chinese dishes and may be purchased either fresh or canned. The shoots of the bamboo are cut when they have grown about 15 cm (6 inches) above the ground. They need to be peeled and the inner, white part boiled for 30 minutes in water. However, the canned variety needs to be boiled for only 10 minutes and may be used immediately in soups or curries.
