This crispy, meaty appetizer starts with real shrimp, bacon, and cheese and delivers a red-hot, crunchy flavor. Just keep the bacon and shrimp frying to get a rich, hot flavor.

Ingredients Edit

  • 6 large shrimp, defrosted
  • 2 oz. cheese, shredded (Colby-Jack, Mozzarella, Colby, Parmesan, Cheddar, or Swiss)
  • 6 slices thick cut bacon
  • hot sauce or sweet chili sauce, optional
  • melted butter, optional

Directions Edit

  1. Peel shrimp, leaving the shell on tail segments and devein. Partially butterfly the shrimp.
  2. Form cheese into 6 long, thin rolls.
  3. Place 1 roll in one open part of each shrimp.
  4. Place shrimp on bacon and roll up.
  5. Run 1 long bamboo skewer through upper portion of all 6 shrimp and another through lower portion of all 6 shrimp in order to keep shrimp closed and hold the bacon in place.
  6. Grill until bacon is cooked and shrimp are no longer translucent.
  7. Remove from skewers to serve. Drizzle with the hot sauce/sweet chili sauce and/or butter, if desired.
