- 2 cups cooked brown rice (cooked in chicken broth), cooled to room temperature
- 1/2 cup sliced celery
- 1/2 cup sliced ripe olives
- 1/4 cup finely diced Onion
- 1/4 cup finely diced red pepper
- 1/4 cup bottled Italian Salad dressing
- lettuce leaves

Combine rice, celery, olives, Onion and red pepper in large bowl. Pour Salad dressing over rice mixture; toss lightly. Serve on lettuce leaves
