Makes 4 servings.

- 1 pound ground Beef or Turkey
- 1 Onion, chopped
- 3 cups cooked rice
- 1 11-ounce can corn kernels with red and green peppers, drained
- 1 cup chunky salsa
- 1/2 teaspoon salt
- 1 1/2 cups (6 ounces) shredded Cheddar Cheese
- Tortilla chips (optional)

Brown Beef and onions in large skillet over medium-high heat. Stir in rice, corn, salsa and salt; stir until thoroughly heated. Top with Cheese. Serve over tortilla chips.
