Authentic Bahamian Fish Chowder

Description
Ingredients
- 2 lb boneless grouper
- 1 med onion, chopped
- 2 x ribs celery, chopped
- 1 med Bell Pepper, minced
- 2 med chopped potatoes
- 4 cup diced tomatoes
- 5 cup fishstock
- 1/2 tsp thyme
- 1/2 tsp allspice
- 2 x Scotch Bonnet Chiles
- 1 x Bay Leaf
- 1 tbl Lime Juice
- salt and pepper to taste
- 1 tbl seasoning salt
Directions
- Dice the fish into approximately 1/2 inch pieces and place in mixing bowl.
- Marinate with lime and spices and place in fridge for 2-3 hrs.
- Bring fish stock to a boil.
- Add all ingredients and simmer for 1 hr, stirring occasionally.
