Aubergines with walnuts

  1. Wash the aubergines, cut them lengthwise, sprinkle them with salt from inside and leave them for an hour.
  2. Then squeeze and fry on olive oil in a pan with closed cover.
  3. Put ready aubergines on a tray and cool them.
  4. Prepare stuffing. Pound walnuts, then coriander seeds, garlic, saffron and salt and delute in vinegar.
  5. Add finely shredded coriander and celery.
  6. Fill the aubergines with the stuffing, arrange on the plate, allow it to impregnate and then serve.
