A variety of gluten free flour made from dried or roasted blue corn that is the common dough for traditional Mexican tortillas. Atole flour or "masa harina" (dough flour) is used to make "masa," the dough used for the tortillas. This flour is also a common ingredient in puddings, desserts and a variety of flat breads served throughout Mexico.
