  1. Boil mixture, stirring constantly until sugar is dissolved.
  2. Set aside and let it cool.
  3. Combine grated papaya and salt.
  4. Knead together for a few minutes.
  5. Wrap 1 cup at a time with a piece of cloth (it should be cotton) and squeeze out moisture.
  6. Soak grated papaya in vinegar overnight.
  7. Squeeze out as much vinegar from the papaya.
  8. Combine with the other ingredients.
  9. Pack in sterilized jars and pour hot pickling mixture over the vegetables.
  10. Let cool at room temperature.
  11. Cover jars tightly and refrigerate.
