  • 2 tbsp oil
  • 2 bunches asparagus, cut into generous bite sized lengths
  • 5 small courgettes, in chunky slices
  • 1 cup adzuki or crunchy combo sprouts

Directions Edit

  1. The sprouts in this wonderfully easy stir-fry give it a lovely nutty flavour and texture! use flavoured oil if you like.
  2. Heat the oil in a non-stick pan, or wok.
  3. Sauté the asparagus and courgettes for 3–4 minutes or until barely tender, toss in the sprouts just before serving.
