Makes about eight portions.

  1. Clean artichokes well in running water.
  2. Trim off tough leaves.
  3. Cut stems close to heads.
  4. Remove outside leaves and choke from center and cut remaining heart into quarters.
  5. Cut each artichoke into quarters.
  6. Fry meat in samneh, add onions and scallions and fry until yellow.
  7. Add water, salt and pepper.
  8. Cook under pressure for 20 minutes.
  9. Open cooker.
  10. Add artichokes, lemon juice and more salt if it seems necessary.
  11. Cook under pressure another 10 minutes.
  12. Open cooker.
  13. Simmer uncovered until most of sauce has evaporated.
  14. Add lemon juice; correct seasoning.
  15. Serve hot with rice.
