Another popular St. Patrick's Day dish.

  1. Peel, core and slice apples.
  2. Place barley in saucepan with 1 liter of water and bring to a boil.
  3. Bring heat to low and add sliced apples.
  4. Continue cooking until barley and apples are soft.
  5. Place barley and apples in a blender and process to a chunky consistency.
  6. Put back in the saucepan.
  7. Add sugar and lemon juice and bring to a boil again.
  8. Remove from heat.
  9. Place pudding mixture in a rectangular container and allow to cool before placing it in the fridge to chill.
  10. Serve chilled with cream stirred in.
