Ingredients Edit

• 5 Red Delicious Apples, sliced
• 1/4 cup fresh lemon juice
• 3 stalks Celery, diced
• 1 (8-ounce) can Pineapple tidbits in unsweetened Pineapple Juice, drained

Dressing:

• 1 cup plain nonfat Yogurt
• 1/2 cup low fat silken tofu
• 1 tablespoon Honey
• 1 teaspoon ground Cinnamon

Directions Edit

1. Place sliced Apples in mixture of lemon juice and water.
2. Add more water if needed to cover Apples.
3. At serving time, drain liquid from Apples.
4. Combine Apples, Celery, and pineapple.
5. For the dressing:
6. Combine Yogurt, Tofu, Honey and Cinnamon in a food processor and blend until smooth.
7. Chill. Combine Apple mixture with dressing and toss gently.
8. Garnish with mint sprigs.
