Anasazi beans are small kidney shaped purple and white beans in the same family as pinto beans. They can be used in Latin American and Southwestern cuisines, and have a mild, sweet flavor which pairs with a mealy texture. Anasazi beans cook much more quickly than regular beans, and they appear to have been a part of the human diet in the Americas for thousands of years.

A dried bean that has a sweet flavor. Anasazi beans were first discovered on an archaeological dig in the Southwest and were called New Mexico cave beans. After introduction to the public, the beans were renamed anasazis. They are colored with speckles of red and white.
