  1. Peel bananas, cut into ⅛-inch slices.
  2. Dip into orange juice. Coat with cornmeal.
  3. Heat oil to 360-370 °F.
  4. Fry a few slices at a time, until golden.
  5. Drain on a cooling rack and blot with paper towels.
  6. Sprinkle with salt, pepper, and pepper sauce.
  7. Arrange onto a serving platter.
  8. Garnish with pimento. Serve hot or warm.
