• 1 cup steamed or poached Sablefish cut 1" chunks
• 1 x Tomato diced
• 1 x Avocado peeled, diced
• 1/2 cup diced Cucumber
• 2 x Green Onion diagonally sliced
• Lettuce
• VINAIGRETTE DRESSING
• 3 tbl Oil
• 3 tbl Wine Vinegar
• 1/4 tsp Salt
• 1/8 tsp freshly-ground Black Pepper
• 1/8 tsp crushed Oregano Leaves
• 3 dsh bottled hot Pepper Sauce

• Combine Sablefish, Tomato, Avocado, Cucumber and Onion.
• Toss gently with Vinaigrette Dressing.
• Serve on lettuce-lined platter.
• Vinaigrette Dressing: Combine all ingredients.
• This recipe yields 2 main-dish servings or 4 side-dish servings.
